Oliviero Colmignoli is from Rome and his family has been in the salumi world, forever. His Grandfather then his father, and now him. He has been living in the states for several years and one he decided to do something special like a family batch and that's how Olli Salumeria was born. A lot of what we do is taking a product that is thousands of years old but using the most advanced techniques to deliver the traditional flavor. Keeping all of the tradition but applying it to the new world.
We take our time selecting the best meats for our product to ensure consistency and quality. Our mixing procedure consisting of a 200-second mixing motion blending the meat until its properly bound together. Our collagen casing acts as a protection to preserve the flavorful meat together while it is staged in our fermenting rooms for three days before moving into our drying rooms to complete the slow-cured process of our product.
